I make my own chicken nuggets…. it’s healthier than store bought…. cheaper….. yummier…. all that stuff!

Mostly I’m just cheap…. and I love to make things in bulk and freeze it for a quick meal.

So when chicken goes on sale and I stock up…. one of the first things I make is a big bag of chicken nuggets.

My kids love them….. they are, in fact, the only chicken nuggets that my son will eat!


As we all know, I don’t measure much when it comes to cooking.  I’m a little old fashioned….. I add a pinch of this, a couple of sprinkles of that…. so I did my best to jot it down last time I made them so that I could share.




Homemade Chicken Nuggets

2 boneless chicken breasts, diced into small pieces

1-2 cups dried breadcrumbs

1/2 tsp paprika

1 tsp oregano

1 tsp garlic powder

1 egg, beaten with a little water to thin


Preheat oven to 400 degrees.

Mix all of the dry ingredients.

Dunk chicken pieces into egg mixture, then into breadcrumb mixture.

For a thicker, crispier crust dunk and coat again.  Spray non-stick spray on a large baking pan (I use coconut oil… which I LOVE… I could write an entire post on just why I love coconut oil)

Bake for 10 mins…. flip over and bake for an additional 5-10 minutes or until cooked through and crispy.


Again, these are GREAT for freezing….. just place in a freezer safe ziploc once cooled.

To reheat – put a few in the microwave for 40-45 seconds
